Throughout my adult life I have tried almost every diet that hit the market. I absolutely love to cook. So, I’d spend hours reviewing the newest diet plan and recipes, then plan the daily menus, make the shopping list, go the grocery store and spend over my budget, all in the name of this new diet plan. Then, I’d come home from work every day and spend hours prepping and cooking for myself, plus separate, non-diet meals for my family.

I’d lose a few pounds and give up. The “diet job” was taking over every spare moment I had, and the weight wasn’t “melting away” as the diet had promised! I was so exhausted. I was a single Mom with 3 kids and a full-time job. My passion for cooking was becoming a nightmare!

I’d return to my normal routine and regain back the pounds I’d lost plus a few more. A new diet would hit the market and I was off again… “The Queen of The Next Best Greatest Diet!”

Then my body began to turn on me. There were days that I couldn’t walk. When the realization came that I was now that “lady in the electric scooter” I knew I needed to do something drastic, or I would be leaving my loved one’s way too soon.

During a routine physical I leveled with my Dr. about all of the issues I was having. She ordered a multitude of tests. I was diagnosed with Pernicious Anemia, Hypothyroidism and I was pre-diabetic. I could not sleep at night due to the constant pain and when I did get to sleep, I would wake myself up gasping for air. I needed a C-Pap machine!  I had arthritis in my hips, knees and feet and was in constant pain. My auto-immune system was fighting for my life, and I didn’t know it.

After years of yo-yo dieting, I had escalated to my highest weight ever of 275 pounds and climbing. My Dr. recommended Weight Loss Surgery. I’m sure you’ve heard of this type of weight loss, you know the one…The easy way out, right?

Not on your life. This is where the lightbulb finally came on. I would be attending preparation sessions and meal-planning for months before surgery and for the rest of my life after surgery. And guess what happened? I found out that meal planning along with meal prep IS the road to success.

I learned this simple step, once a week, puts me in control. It gives me that precious gift of time to do the things I’ve missed doing like, going to the gym, taking a walk, relaxing, reading a book or exploring my new hobby. I can do these things with happiness in my heart and see the difference it has made in my life. I don’t feel tied to my kitchen because I must cook every day. I am happy to go in there, pull out a few things, put it all together and know that I am serving my family a fresh, delicious, nutritious meal. Using this simple step I have lost over 100 pounds, I walk 3-5 miles every day, my A1-C is normal and I no longer have to use the C-Pap machine.

But my story did not end here, in fact, it was just the beginning.

Shortly after my weight loss surgery I was at a seminar. The opening speaker gave us a test to take. We were to envision ourselves doing what we dreamed we could be our best at. My vision was teaching people to plan & prepare delicious, nutritious food. The next step was to share the vision with the person next to me. I didn’t know when I shared my vision that the person next to me was New York Times bestselling author Leanne Ely and the creator of the original menu planning website, SavingDinner.com.

A nutritionist since 1993, Leanne shared with me that she had just launched her latest success, NutriCoach School. Combining the love of food and nutrition with the art of cooking, the curriculum is built upon the foundation of good, solid nutrition and cooking skills.

I received my NutriCoach Certification and followed that up with the Certified ServSafe®Food Service Manager designation by the American National Standards Institute (ANSI) and began Gracie’s Table two years ago

Since that day I am living my vision and loving every minute of it. Gracie’s Table has helped busy professionals, individuals and groups learn how to prepare delicious, nutritious meals for themselves and their families. As a former restaurant owner, along with a strong background in the hospitality industry it has been a natural progression to add Personal Chef to my resume.
